Ingredients
 

Cilantro Lime Dressing
  • 2 tbsp lime juice (about 1 lime)
  • 1 cup fresh cilantro (about 30 g) stems and leaves
  • ¼ cup hulled hemp seeds (60 g)
  • 1 small garlic clove
  • 1 medjool date pitted
  • ½ jalapeño seeded (or use the whole thing if you love heat)
  • ¼ cumin powder
  • ¼ fleur de sel optional
  • cup water (80 ml)

Method
 

  1. Add all the ingredients to a high-speed blender and blend until smooth and gorgeously green.
  2. Taste and adjust — more lime for extra zing, more date if you prefer it a little sweeter, more water to reach your ideal drizzle consistency.
  3. Pour into a squeeze bottle or jar and serve over your Smoky Walnut Tacos with Radicchio Taco Shells.
